Ingredients
1-2 large grapefruits (based on preference)1 cup thinly sliced red onion1/4 cup seasoned rice vinegar1 tablespoon extra-virgin olive oil1 tablespoon honey1 teaspoon fennel seeds1/4 teaspoon salt6 cups gourmet salad greens
Directions
- Peel and section grapefruit to get 1 1/2 cups of sections, reserving 2 tablespoons grapefruit juice. Combine grapefruit and onion in a large bowl.
- Combine reserved grapefruit juice, vinegar, and next 4 ingredients; stir well with a whisk or fork.
- Add salad greens and dressing mixture to grapefruit mixture; toss well. Serve immediately.
