Ingredients
4 cups kale chopped, massaged, and loosely packed1 medium grapefruit, sectioned1 cup raw walnuts, chopped (optional)4oz crumbles of goat cheeseSalt and pepper to tastehoney vinaigrette
Directions
- Peel grapefruit whole. Using a sharp paring knife, cut out each section of fruit, leaving the bitter pith behind.
- Chop 1 cup of raw walnuts, and crumble feta, set both aside.
- Place one handful of greens on a plate, top with grapefruit, feta and walnuts.
- Drizzle vinaigrette over salad, and sprinkle salt and pepper if desired.
