For the body of the salad:Whatever is fresh and in season, choose lettuces that are deep green in pigment.Carrots, Celery, Tomatoes, Cucumber all compliment a salad.Add fruit or spiced nuts to add crunch.A good cheese is an excellent source of dairy, think about feta or goat cheese.For the Vinaigrette: 1 teaspoon finely minced garlic1/2 teaspoon Dijon mustard3 tablespoons white balsamic vinegar1/2 cup good olive oil1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper
Directions

  1. Chop all veggies according to your taste preference and toss together.
  2. 2. Add accompaniments like cheese or nuts
  3. 3. For the vinaigrette, whisk all the ingredients together.
