Ingredients
2 cups okra, sliced2 eggs½ cup water¼ red onion, thinly sliced½ tbsp butter1 cup cherry tomatoes1 tsp olive oilsalt and pepperÂ
Directions
- 1. Wash the okra, cut both ends off and slice into thin rounds.
- 2. Heat the water in a small frying pan and add the okra, onion, oil, salt and pepper to taste. Let it cook for 10 mins.
- 3. Add the butter and cherry tomatoes, cook for 3 minutes.
- 4. Add the eggs, lower the temp to medium low and cook for about 2-3 minutes or until the eggs are done.
