Ingredients
A handful of jalapenos and a few serrano peppers ( depends how much heat you can take)
2 Roma tomatoes
1 small yellow onion ( or red onion, my favorite)
2 cloves of garlic
Fresh cilantro
1 teaspoon of cooking oil
Salt and pepper to taste
1/3 of cup of water ( you can play around with it depending how thick you want your salsa)
Paprika or saffron for added color if available
 You can chop your ingredients ( rough pico de gallo style,or julienne style)
Directions
- In a saucepan, preheat your oil,( medium heat ) add your chopped garlic and onions and Saute for 1-2 minutes.
- After they’re done, continue to add the peppers then the tomatoes until all is well integrated. You can then sprinkle your salt, pepper, and other spices like cumin, saffron and or paprika. You can gradually reduce the heat to low. You will then add your water and let it simmer for 2 minutes. After the salsa starts to boil, you add your fresh cilantro and turn heat off.
- Transfer the sauce to a heat resistant bowl.
- You can make your eggs any style with this salsa and you will be just as equally pleased as the flavor is a great addition to many breakfast dishes. The recipe calls for fried eggs so we will go with that.
- In a pan with a bit of cooking oil , you make your eggs any preferred style. You serve your fried eggs on a warm tortilla. You plate your tortillas and eggs and top if off with your ranchero style. You can complement your eggs with refried beans, a few pieces of ham, bacon and few slices of fresh avocado. And Voila, your authentic Mexican homemade brunch is callin’!
