Ingredients
  1 tbsp avocado oil1 yellow onion, chopped2 tbsp ginger, grated3 cloves garlic, chopped1 lb carrots, peeled and cut into 1-inch chunks1 medium sweet potato, peeled and cut into 1-inch chunks4 cups vegetable broth (or sub 2 cups for coconut milk)2 tsp saltgarnish with lemon juice and fresh chives
Directions
- Heat oil in medium saucepan over medium heat.
- Saute onion till tender (~5-6 min), stirring occasionally.Â
- Add garlic and ginger and stir until fragrant (~30 sec).
- Add carrots, sweet potato and salt, saute until starting to caramelize.
- Add broth (coconut milk). Bring to a boil. Reduce to a simmer, cover and cook 'til veggies are tender (~25 min).Â
- Carefully puree in batches in a blender or use an immersion blender.Â
- Stir is lemon juice and top with chives. Enjoy!
