Ingredients
For the meatballs:1 lb. extra lean ground beef, ground turkey, or chicken1/4 cup bread crumbs1 egg1 tbsp. Italian seasoningSalt and pepper to tasteFor the soup:1/4 cup onions3 large carrots2 stalks of celery1 clove garlic minced10 cups chicken broth1/2 Acini de Pepe or Ditalini pasta uncooked4 cups fresh greens of your choice (spinach, swiss chard, or kale)Freshly grated pamesan
Directions
- Mix together the ingredients for the meatballs and make into one inch diameter balls.
- Sautee onions, carrots and celery in olive oil in large stock pot.
- Add chicken broth, meatballs and uncooked pasta. Simmer for 10-15 minutes.
- Add greens and cook until wilted.
- Top with grated parmesan.
