Farmers Market Italian Wedding Soup

Ingredients
For the meatballs:1 lb. extra lean ground beef, ground turkey, or chicken1/4 cup bread crumbs1 egg1 tbsp. Italian seasoningSalt and pepper to tasteFor the soup:1/4 cup onions3 large carrots2 stalks of celery1 clove garlic minced10 cups chicken broth1/2 Acini de Pepe or Ditalini pasta uncooked4 cups fresh greens of your choice (spinach, swiss chard, or kale)Freshly grated pamesan
Directions

  1. Mix together the ingredients for the meatballs and make into one inch diameter balls.
  2. Sautee onions, carrots and celery in olive oil in large stock pot.
  3. Add chicken broth, meatballs and uncooked pasta.  Simmer for 10-15 minutes.
  4. Add greens and cook until wilted.
  5. Top with grated parmesan.
