Crispy Okra with an Herbed Yogurt Dipping Sauce

Ingredients
2 lbs okra1/3 cup olive oil6 garlic cloves, minced4 jalapenos, sliced (optional)1/3 cup fresh herbs- rosemary, thyme, sage, oregano (roughly chopped)1/2 tsp red pepper flakessalt and pepper, to taste Herbed Yogurt Dipping Sauce1 cup whole milk yogurt2 Tablespoons lemon juice1 teaspoon honey1/2 teaspoon Cajun seasoning1/4 teaspoon saltHerbed Yogurt Dipping Sauce1 cup whole milk yogurt2 Tablespoons lemon juice1 teaspoon honey1/2 teaspoon Cajun seasoning1/4 teaspoon salt1/3 cup finely chopped fresh herbs (rosemary, thyme, oregano, dill) 
Directions
  1. Preheat the oven to 450°F degrees.
  2. Rinse the okra and jalapeno, pat dry. Trim ends and stems, then cut okra in half lengthwise, and thinly slice the jalapeño (if using). Transfer to a bowl, set aside.
  3. In another small bowl, combine chopped herbs, olive oil, garlic, red pepper flakes, salt, and pepper. Pour the herb mixture onto the okra and mix well.
  4. Bake the okra for 20 minutes - until golden brown on the outside yet tender.
  5. Serve hot and enjoy their crispy texture.

Herbed Yogurt Dipping Sauce

  1. Place yogurt, lemon juice, honey, Cajun seasoning, salt and chopped herbs in a small bowl.
  2. Stir until well blended. Adjust to taste :)
  3. Cover and refrigerate until ready to serve.
