Ingredients
Dressing½ cup extra virgin olive oil2 tablespoons honey1 tablespoon lemon juice - freshly squeezed3 garlic cloves - finely minced½ teaspoon kosher salt½ teaspoon ground black pepperSalad8 cups arugula1 cup blackberries - fresh¾ cup walnuts - chopped (or pecans)½ cup goat cheese - crumbled
Directions
For the Dressing
- Add the olive oil, honey, lemon juice, garlic, salt and pepper to a large bowl and whisk to combine. Reserve about half of the dressing to serve later.
For the Salad
- Toss with the arugula, blackberries, walnuts or pecans and goat cheese. Serve immediately with the reserved dressing.
