Gluten Free Pasta Primavera

Gluten free pasta primavera with vegetables that grow in the Gulf Coast region in the winter and spring. Recipe by Melissa Huerta

Ingredients
1 cup collard greens, chopped 1/2 cup shredded carrots 1 yellow onion, diced1 bell pepper, seeded and sliced 3 cloves garlic, chopped 3 tomatoes, Diced One Yellow squash, cut into rounds 1/2 cup vegetable broth 4 to 5 fresh basil leaves, sliced Half cup parmesan cheese
Directions

  1. Cook rice noodles according to package directions. Set aside.
  2. Heat Olive oil at medium high heat in a saucepan. 
  3. Add in carrots, onion and garlic and bell pepper. 
  4. Sauté 5 minutes. 
  5. Add in collards and tomatoes. Stir, cooking 5 minutes.
  6. Add squash, broth and basil. Season with salt and pepper.
  7. Toss with noodles. Top with parmesan cheese.Â
