Ingredients
1 cup collard greens, chopped 1/2 cup shredded carrots 1 yellow onion, diced1 bell pepper, seeded and sliced 3 cloves garlic, chopped 3 tomatoes, Diced One Yellow squash, cut into rounds 1/2 cup vegetable broth 4 to 5 fresh basil leaves, sliced Half cup parmesan cheese
Directions
- Cook rice noodles according to package directions. Set aside.
- Heat Olive oil at medium high heat in a saucepan.Â
- Add in carrots, onion and garlic and bell pepper.Â
- Sauté 5 minutes.Â
- Add in collards and tomatoes. Stir, cooking 5 minutes.
- Add squash, broth and basil. Season with salt and pepper.
- Toss with noodles. Top with parmesan cheese.Â
