Ingredients
1 lb ground grass fed beef2 carrots, peeled and sliced2 ribs celery, slicedGreens (this can be 1 bunch of kale chopped into bite-size pieces, 1 head of bok choy, 1 bunch of chard, etc.)1 bell pepper, sliced1 inch piece of ginger, peeled and diced1 yellow onion, sliced3 radishes, sliced3 cloves garlic, chopped1 teaspoon olive oilSalt and pepper to tasteGreen onions, chopped
Directions
- Heat skillet to medium high heat.
- Brown ground beef. Remove from pan.
- Add olive oil, and all other vegetables.
- Stir fry together for 10 minutes.
- Add beef back into pan.
- Serve hot, garnish with chopped green onions.
*Always remember: All ingredients can be replaced with what you have on-hand.
Use chicken instead of beef, collard greens instead of kale. Don’t have any peppers? Leave them out! Make the recipe work for you!
