Roasted Butternut Squash

Ingredients
1 large Butternut Squash2 Tbsp Olive Oil1 tsp fresh thyme1 tsp fresh rosemary1 tsp garlic powderSalt and pepper (to taste)
Directions

Preheat oven to 375 F

Wash and dry your squash

Cut off the end and use vegetable peeler to peel off skin

Cut off top with stem

Slice squash down the center, scrape out seeds

Slice squash into ½ -1 inch slices

Cut slices into ½ - 1 inch cubes

Place in single layer on baking sheet, add oil, herbs and seasonings.

Toss to coat

Bake for 40 minutes or until tender flipping squash over halfway through cooking

Serve and enjoy!
