Red Bell Pepper Hummus

Ingredients
2 Cups cooked garbanzo beans2 lemons, juice1 red bell pepper, sliced1 small yellow onion, diced3 cloves garlic, chopped2 tablespoons tahini3 tablespoons olive oilsalt and pepper to tasteCut vegetables for dipping (broccoli, carrots, celery, cucumbers, etc)
Directions

Heat a skillet to medium high heat. Add 1 tablespoon olive oil. Add the onions, garlic, and red bell pepper. Season with salt and pepper.

Cook until onions are translucent,

Cool. In a food processor place garbanzo beans, lemon juice, tahini, bell pepper, onion and garlic. Blend together until it makes a paste. 

Drizzle olive oil while blending, & season with salt and pepper to taste.

Serve cold with cut vegetables & crackers.


*Remember, you can always use what you have on hand, if you don’t have any of the specific ingredients.
