Radish and Arugula Salad

Ingredients
Sliced bread 1 ½ cups sliced radishes 1 tablespoon olive oil 1 tablespoon fresh lemon juice ¼ teaspoon freshly ground black pepper 1/8 teaspoon salt 4 ounces butter or mayonnaise (about 1/2 cup) 2 cups baby arugula leaves
Directions

Cut bread in half.

Combine radishes and next 4 ingredients (through salt) in a

medium bowl, and toss to coat.

Spread each bread slice with butter or mayonnaise; top with

a single layer of arugula and a layer of radish slices.
