Puerto Rican Sofrito

Ingredients
 4 Anaheim peppers (or 2 green peppers) 4 large onions3 garlic heads1 lb ají dulce (o 1 habanero pepper)1 bunch cilantro1 bunch culantro2 tablespoons fresh oregano (Cuban is best)1 teaspoon salt
Directions

Wash and cut into smaller pieces all the ingredients, place them in a food processor or a blender. Process until you achieve the desired consistency (the processor will produce small chunks and the blender will give you a well ground sofrito).

Add the salt, mix sofrito with a spatula. Divide into two containers with lids. Storing in the freezer will extend the life for several months (in the refrigerator, it will last approximately 1 month).
