Ingredients
1 teaspoon sesame oil1 pound ground turkey1/2 cup yellow onion, sliced thin6 cloves garlic, chopped1 (1 inch) piece of ginger, chopped3 carrots, sliced3 ribs celery, sliced1 orange, juiced and zested2 cups cabbage, chopped1 eggplant, diced.2 teaspoons soy sauce1 bunch green onions, chopped
Directions
Add sesame oil to a hot skillet. Put in onion, garlic, ginger, carrots, celery, and orange zest. Stir fry 4 - 5 minutes.Â
Add the turkey to the pan. Stir fry 5 minutes. Add in cabbage, eggplant, soy and orange juice. Continue cooking 5 minutes. Add salt and pepper to taste.Â
Serve with green onions on top. Enjoy!!
