Ingredients
1 lb beef1 medium onion, chopped3 cloves garlic, finely chopped¼ cup finely chopped cilantro or parsley1 ½ teaspoons ground ginger1 teaspoon salt1 teaspoon turmeric½ teaspoon black pepper¼ teaspoon ground cinnamonCayenne pepper to taste⅓ cup olive oil2 lbs carrots, halved or quartered½ cup red or green olivesJuice of 1 lemon1 teaspoon butter3 cups water
Directions
- Mix meat with onion, garlic, cilantro/parsley, spices and olive oil in large pot.
- Brown the meat, uncovered, over medium heat for about 10 minutes, stirring occasionally.
- Add 3 cups water, cover and let simmer for about 1 hr. Check on the level of broth occasionally and add more water if level gets very low.
- Add carrots and enough water so that the broth almost reaches the top of the carrots. Cover and simmer until carrots are almost tender, around 20 minutes.
- Add olives, lemon juice and butter. Let simmer to reduce the sauce until quite thick.
- Serve over white or brown rice and enjoy!
