Moroccan Beef Tagine with Carrots, Olives & Lemon

Ingredients
1 lb beef1 medium onion, chopped3 cloves garlic, finely chopped¼ cup finely chopped cilantro or parsley1 ½ teaspoons ground ginger1 teaspoon salt1 teaspoon turmeric½ teaspoon black pepper¼ teaspoon ground cinnamonCayenne pepper to taste⅓ cup olive oil2 lbs carrots, halved or quartered½ cup red or green olivesJuice of 1 lemon1 teaspoon butter3 cups water
Directions

  1. Mix meat with onion, garlic, cilantro/parsley, spices and olive oil in large pot.
  2. Brown the meat, uncovered, over medium heat for about 10 minutes, stirring occasionally.
  3. Add 3 cups water, cover and let simmer for about 1 hr. Check on the level of broth occasionally and add more water if level gets very low.
  4. Add carrots and enough water so that the broth almost reaches the top of the carrots. Cover and simmer until carrots are almost tender, around 20 minutes.
  5. Add olives, lemon juice and butter. Let simmer to reduce the sauce until quite thick.
  6. Serve over white or brown rice and enjoy!
