Mixed Greens Salad w/ Orange Honey Mustard

Ingredients
2 cups mixed baby greens2 carrots, sliced1 jicima, julienned4 tomatoes, sliced1 cucumber, sliced1 bell pepper, sliced1 orange, zested and juiced1 tablespoon dijon mustard1 teaspoon mixed fresh herbsâ…“ cup olive oilSalt and pepper to taste
Directions

  1. Mix orange zest and juice, mustard, honey, and fresh herbs. Whisk together.
  2. Stream in olive oil while whisking.
  3. Toss in salad greens with tongs.
  4. Top with carrots, tomato, jicima, cucumber, and bell pepper.
  5. Enjoy cold!
