Awesome Kale Salad

Ingredients
4-6 cups chopped kale3 ounces finely grated cheese1 honeycrisp appleVinaigrette:2 tablespoons red wine vinegar1 ½ tablespoons honey1 sp dijon mustard1 shallot, diced1 garlic clove, minced¼ to ½ teaspoon ground cinnamon¼ teaspoon salt¼ teaspoon pepper¼ cup olive oil
Directions

  1. Combine the vinegar, honey, mustard, shallot, garlic, cinnamon, salt & pepper and olive oil in a small bottle or canning jar.
  2. Shake until emulsified. This keeps great in the fridge for a few days!
  3. Massage the kale with a tablespoon or so of dressing and season with salt & pepper.
  4. Let it sit with 5 to 10 minutes.
  5. Slice the apples and combine apples, cheese and kale and toss well. Serve with the vinaigrette!
