Rubbed Kale Salad

Ingredients
6 cups or 2 bunches of kale2 lemons1 Teaspoon Salt¼ cup olive oil1 cup grated parmesan or ½ cup dried parmesan2 Tablespoons honey (OPTIONAL)
Directions

  1. 1. Take the leaves off the stems
  2. 2. Put the stems away to be cut up and sauteed with onions and oil for
  3. another meal
  4. 3. Put the kale leaves into a big bowl, and tear up into pieces no larger
  5. than 1 inch in diameter.
  6. 4. Squeeze lemon juice over the kale.
  7. 5. Pour olive oil over kale.
  8. 6. Sprinkle salt over the mixture.
  9. 7. Rub the kale between your fingers for at 3 minutes. SET A TIMER!
  10. 8. If you like your salads kind of sweet, add the honey, and mix into the
  11. salad.
  12. 9. Finally, add the parmesan cheese and toss lightly through the salad.
