Ingredients
6 cucumbers1 cup apple cider vinegar3 tsp kosher salt3 tbsp sugar3 tbsp dill, dried or freshGround pepper to taste1 red onion
Directions
- Wash the cucumbers. If they’re fresh and local, there’s no need to peel. If bought from the store, you make the call. :)
- Slice cucumber into ¼ inch rounds.
- Slice ¼- ½ of the onion into thin ribbons.
- Whisk together the vinegar, salt, sugar and dill.
- Pour the dressing mixture over the vegetables and toss. Let it sit for 30 minutes and toss again.
- Add ground pepper to taste.
- Serve cold.
