Tangy Cucumber Salad

Ingredients
6 cucumbers1 cup apple cider vinegar3 tsp kosher salt3 tbsp sugar3 tbsp dill, dried or freshGround pepper to taste1 red onion
Directions

  1. Wash the cucumbers. If they’re fresh and local, there’s no need to peel. If bought from the store, you make the call. :)
  2. Slice cucumber into ¼ inch rounds.
  3. Slice ¼- ½ of the onion into thin ribbons.
  4. Whisk together the vinegar, salt, sugar and dill.
  5. Pour the dressing mixture over the vegetables and toss. Let it sit for 30 minutes and toss again.
  6. Add ground pepper to taste.
  7. Serve cold.
