Ingredients
1 cup unsalted cashews1 cup water1 can of rotel2 tbsp Nutritional Yeast2 cloves garlic1 tsp cumin1 tsp salt1 tsp pepperJalapeno (optional)
Directions
- Allow the cashews to soak overnight, or boil them in water until soft before cooking.
- Place cashews, and all other ingredients into blender.
- If the sauce is too thick, add a tbsp spoon of water and blend until you reach the desired consistency.
- *This can be used to make dairy-free mac and cheese and used in dairy free casseroles as well.
