Queso (with No Dairy)

Ingredients
1 cup unsalted cashews1 cup water1 can of rotel2 tbsp Nutritional Yeast2 cloves garlic1 tsp cumin1 tsp salt1 tsp pepperJalapeno (optional)
Directions

  1. Allow the cashews to soak overnight, or boil them in water until soft before cooking.
  2. Place cashews, and all other ingredients into blender.
  3. If the sauce is too thick, add a tbsp spoon of water and blend until you reach the desired consistency.
  4. *This can be used to make dairy-free mac and cheese and used in dairy free casseroles as well.
