Ingredients
◠2 Tablespoons olive oil◠1 medium onion◠4 garlic cloves, minced ◠Pinch red pepper flakes ◠1 ½ pounds ground beef◠1 ¾ teaspoons salt◠Freshly ground blackpepper◠Pinch of groundcinnamon◠2 teaspoons ground cumin◠2 bay leaves◠1 18oz can diced tomatoes ◠1 sweet potato, peeled and chopped◠¼ cup dry white wine◠2 Tablespoons cider vinegar◠½ cup raisins◠½ cup green olives, sliced
Directions
- Â In a large, heavy saucepan over medium heat, heat the olive oil. Add the onion and cook until tender and translucent, about 5 minutes. Add garlic and red pepper flakes and cook another minute.
- Add ground beef, salt and pepper,and saute, breaking up the meat with a spatula. Cook until the liquid has evaporated and the meat sizzles. Add spices and bay leaves and saute for 30 seconds.
- Add tomatoes and their juices, sweet potato, wine and vinegar. Bring to a boil, lower the heat to a simmer, cover and cook for 15 minutes.
- Uncover pan and add the raisins and olives. Allow to cook for another 10 minutes. Garnish with cilantro, if using. Serve over calui-rice.
