Homemade Marinara

Ingredients
1 tablespoon extra virgin olive oilhalf an onion, finely chopped4 garlic cloves, crushed2 tablespoon tomato paste1 28oz. can crushed tomatoes with the juice1⁄2 teaspoon dried oregano2 dry bay leavesSalt and pepper to taste
Directions

  1. In a saucepan, heat olive oil over medium heat. Add onions and cook 4-5 minutes until they are soft and golden.
  2. Add garlic and sautè, being careful not to burn.
  3. Add tomato paste and stir well. Add crushed tomatoes, including the juice.. Add dried oregano, dry bay leaves, salt and pepper.
  4. Cover and bring to a low simmer for 25-30 minutes.
  5. Finally, remove from the heat, and remove the bay leaves. Adjust the seasoning if you think it is necessary. You can use this delicious sauce in your favorite recipes or you can pour the sauce in a mason jar and keep it in the fridge for 3-4 days or you can freeze it and it will last for months.
