Greens with Honey Mustard Vinaigrette

Ingredients
1 clove garlic, peeled and sliced in half1 cup olive oil1 tablespoons Dijon mustard1 tablespoons honey3 tablespoons white wine vinegarSaltPepper3 cups fresh mixed greens2 large carrots
Directions

  1. For the salad: Chop the root off of each head of lettuce, and roughly chop the greens into bite size pieces. Clean carrots thoroughly and slice into thirds. Cut each section lengthwise and julienne them.
  2. For dressing: Rub the sides of a bowl with garlic, then discard. In bowl whisk together mustard, honey and vinegar. While whisking, slowly add olive oil. Season with salt and pepper.
  3. Serve the greens topped with carrots and drizzled with dressing! Sprinkle with salt and pepper to taste.
