Ingredients
1 tablespoon extra virgin olive oil2 cups mixed salad greens1 carrot, shredded1 cucumber, siced2 tomatoes, sliced1 cup pecans1 teaspoon cayenne4 tablespoons honey1 grapefruit, juiced2 tablespoons olive oiChopped fresh herbsSalt and pepper to tastel
Directions
- Place salad greens in a bowl. Top with carrot, cucumber, and tomato.
- In a skillet, heat pecans, 3 tablespoons honey, cayenne, and salt and pepper, stirring constantly. Cook 5 minutes then cool.
- In a separate bowl combine grapefruit juice, remaining honey, herbs and olive oil. Whisk to combine.
- Top salad with dressing and cooled pecans.
